4 Easy Christmas Recipes to Try This Year
The Christmas spirit is among us and we don’t know about you, but we’re certainly looking forward to Christmas dishes in particular!There’s something about the sweet and savory holiday dishes that feels nourishing to the soul. Christmas only comes once a year (thought we all wish it happened more often), so why not pull out the tastiest recipes?Traditional Christmas recipes often take hours of preparation and exhausting effort—fortunately, there’s another way. Check out these four easy Christmas dishes to try this holiday season.#1 Cookie Reindeer This simple, delicious recipe will leave you with 15 cookie reindeer. We promise you and your guests will love them (or just you, if you’re not hosting this holiday season!).You will need:Pretzels1 bag of oval cookies, like MilanosWhite frostingCandy eyes (30)Red chocolate-covered candies (15)The best part of this recipe is it’s family-friendly, so little ones can easily help out.Line a baking sheet with parchment paper. Snap the pretzels in half down the middle—you’ll need one pretzel for each reindeer’s antlers.Put a dab of white frosting on the top of each cookie and push the pretzels gently into the frosting. Flip the cookies over and leave them pretzel-side down on the baking sheet.Put a dab of white frosting for each eye and nose on the cookie, then stick on the candy eyes and red chocolate noses!Refrigerate the cookies for 5 to 10 minutes or let sit at room temperature for at least an hour to allow the frosting to solidify. Enjoy!#2 Loaded Baked Potato Casserole If you enjoy potatoes, then you’ll love this recipe. This easy-to-make banked potato casserole will outshine any other dish!You’ll need:5 russet potatoes4 tbs softened butter1 cup sour cream¾ cup half and half1 ½ tsp salt½ tsp pepper3 cups cheddar cheese, shredded (substitute gruyere, Monterey Jack, feta, Parmesan, or other types of cheese to change the flavor)10 slices of crisp, crumbled bacon4 green onions, slicedHeat your oven to 400°F and spray a 3-quart baking dish with cooking spray.Place the potatoes on a cookie sheet and prick holes in them with a fork so they’ll cook inside. Bake for 1 hour to 1 hour and 15 minutes, or until the potatoes are tender.Remove the potatoes and reduce the temperature to 350°F. Let the potatoes cool for about 15 minutes, until they’re easy to handle.Cut the potatoes in half and scoop the insides into a large bowl. Add the softened butter and mash the potatoes until the lumps are mostly gone. Stir in the sour cream, half and half, salt, and pepper.Set aside 1 cup of cheese, 3 tbs of bacon, and 1/4 of the sliced green onions. Stir in the remaining cheese, bacon, and green onions.Spoon the mixture into the prepared baking dish and place the reserved cheese on top. Bake for 30-35 minutes, or until the top is slightly puffy and brown around the edges.Garnish with the reserved bacon and green onions. #3 Pineapple and Ginger Beer Glazed HamSome of us look forward to a delicious turkey each Christmas, while others opt for a delicious flavored ham. To make this easy glazed ham, you only need a 4-ingredient marinade—and the ham, of course!You’ll need:½ cup pineapple juice2 cups ginger beer1/3 cup brown sugar1 tsp Dijon mustardPreheat your oven to 350°F. Combine the ginger beer, pineapple juice, mustard, and sugar in a saucepan over medium high heat. Bring to a boil, then reduce heat to medium and allow to simmer for 20-25 minutes (or until thickened).Remove the glaze from the heat and let it sit for 10 minutes.While waiting, use a small, sharp knife to cut through the ham rind. You’ll want to cut about 8 cm from the shank, then run your thumb under the rind to separate it from the fat, starting at the end opposite to the shank.Peel back and remove the rind and score the fat with the knife at 1 cm intervals. Wrap the shank end of the ham in foil.Place the ham on a lightly greased wire rack in a large roasting pan and add 2 cm of boiling water.Brush the ham with about 1/4 of the glaze. Bake the ham, basting it with the glaze every 20 minutes. Bake the ham for 1 hour and 30 minutes, or until the outside is golden and caramelized.Remove and discard the foil, and serve.#4 Smoked Salmon WreathA smoked salmon wreath is a quick and easy starter dish—on top of which, it’s super healthy and ready in only 30 minutes!You will need:1 large fennel bulb, trimmed, with the core removed3 limes2 green shallots, trimmed3 large, ripe avocados250 g baby cucumbers, peeled into ribbons1 bunch radishes (200 g) washed, trimmed, and thinly sliced400 g smoked salmonExtra virgin olive oilCrème fraicheSalmon roeFresh dill sprigsMicro herbsCrackers or crusty bread (optional)Slice the fennel lengthwise with a mandoline, then place the slices in a mixing bowl. Squeeze one of the limes into the bowl, add a pinch of salt, and toss to combine. Set aside.Cut the shallots lengthwise and place them in a bowl of ice water for 2-3 minutes, or until they are slightly curled. Drain and set aside.Mash the avocados and juice the remaining limes over them. Add salt and pepper or other seasonings. Stir to combine. Arrange the mashed avocado around the edge of a large serving platter.Drain the fennel. Arrange the fennel, cucumber, radish, shallot, and salmon over the top of the avocado.Drizzle with olive oil and season with more pepper. Add a dollop of crème fraiche and salmon roe.Sprinkle the dill and micro herbs over the plate. 5 Tricks to Avoid Take-Out Temptation
We’ve all been here: You went grocery-shopping on your designated day (or multiple days), you’ve bought all the healthy items (around the perimeter of the grocery store, of course), and stayed within your budget. However, after a long morning work meeting, after a long day at work, and/or a long week, it’s finally Friday… …yet, you do not want to cook or eat what you’ve brought to work for lunch, and you fall back into the habit of eating out and burning through your budget. How can you solve this problem? How can you save your money and eat the groceries you’ve worked so hard to afford? See the helpful tips below: 1. Become a Meal Prep Expert Yes, meal prepping is vital to helping you save money and eating at home! Do you have an Instant Pot, slow cooker, or (my favorite) an air fryer?? Set aside some time on a Sunday, or other day, and prep all your meats, sauces, and produce! Also, invest in some useful meal-prep containers and remember to freeze your food! Put on one of your favorite podcasts or your favorite musical artist and go to town in your own kitchen. I promise, it’s fun! 2. Learn New, Tasty Recipes During the pandemic and quarantine, I’ve invested in a few different cookbooks and subscribed to new cooking YouTube channels. Sometimes you just need to “spice up” (no pun intended) your go-to dinner items. I started a ketogenic/low-carb way of eating and I’ve been having so much fun learning and experimenting with new recipes. Make sure that the recipes are fun, easy (cause we’re boss ladies, with little time), and tasty! Try to challenge yourself to try 1-2 new recipes a week! Your rolodex of recipes will increase! 3. Don’t Rule Out Convenient Meals This tip has saved me so many times. What about those days where you don’t have energy or time to cook, but really want to stick with your “eat your groceries” mindset: convenient meals! Do not rule out the frozen TV dinners in the frozen aisle, or those quick and easy microwavable Easy Mac dinners! Are they the healthiest option? That is debatable. Will you save money by eating those instead of ordering from GrubHub or UberEat? Absolutely! *Pro tip* Always add a few of these to your grocery list. And don’t forget you can buy frozen veggies and fruit! 4. Make a Big Dinner and Eat Leftovers for Lunch the Next DayWhen I was working in an office, this was also a saving grace for me. I love pasta, and those are very easy recipes. I always make a family-style batch, even though I live alone! I was known to bring in spaghetti, chicken and broccoli alfredo, and angel hair pasta as leftovers at least twice a week at work! Now for some reason, some people are very anti-leftovers…this is not the case at City Girl Savings, we very much encourage our community to utilize and maximize your weekly groceries. Get creative with your leftovers and create new recipes with those! 5. Review Your ‘Eating Out’ Budget Each Month This was it for me, personally. Once you review just how much you’ve spent on eating out, takeout order, delivery services, you WILL change your habits and eat at home… This is especially true if you spend a lot of money eating out and you’re still buying weekly groceries. Ask yourself, how many times have you thrown out fresh vegetables and/or fruit because you didn’t eat it fast enough? I have thrown out full containers of strawberries, avocados (I cried), and onions…it’s not fun. Once you see just how much money you’ll save by cooking (prepping or microwaving) your own food, you’ll be so proud of yourself. Not just of the money you’re saving, but the new recipes and skills you’ll gain! Now, here at CGS we do not discourage you from enjoying life. We’re human and we love a nice social outing just like everyone else. However, we are also of the mindset that you can do everything—but do so in balance and within budget. 5 Ways to Give Thanks During the Holiday Season
There’s something about the holiday season that brings our gratitude to the surface. When the holidays roll around, you can start to see the shift in people’s attitudes. The holidays can turn your office Scrooge into the sweetest enthusiast—just watch! We all know that the holidays give us a chance to focus on the most important parts of life and how grateful we are for what we have. We’re sharing 5 ways to give thanks during the holiday season. #1 Get Intentional When you make your gratitude intentional, it’s like the heavens open up. You’ll start to see and hear things differently. Getting intention helps you focus your attention on what you have, rather than what you lack. It’s a great way to show gratitude during this year’s holiday season. When you’re intentional, you choose to make decisions and take action based on what’s truly important. Remember your mom’s favorite flower, and give her a bouquet full of them. If your friend mentioned they need a new kitchen appliance to launch their meal plan business, make that your gift to them this year with a note thanking them for the friendship you’ve built. We’re confident that your intentional expressions of gratitude will be heard loud and clear. Count your blessings, and then make an intention of being the blessing for someone else. #2 Give Back One major way of expressing gratitude is finding a way to give back. Giving back is an act of kindness for others—and it also helps to boost our own mood, reinforcing gratitude. There’s something magical about giving back and helping improve another person’s situation. Giving back doesn’t just have to be to people you know. You can also find ways to give back to your broader community. Giving back can look different from person to person. One person might feel strongly about a specific charity’s mission, and donate money as a way to help support it. 5 Ways to Stretch Your Dollar Through All the Seasonal Festivities
“It’s the most wonderful time of the year…”! Oh, I just love the holiday season. It’s like there’s something in the air! The twinkling lights, the Christmas trees, snow (depending on where you are), it’s all so magical! While it’s fun to enjoy the energy that comes around the holidays, it’s also easy to let your budget get out of control! The holiday season goes hand in hand with spending, but if you’re intentional and wise about it, you can stretch your dollar and make it work for you. I’m sharing 5 ways to stretch your dollar through all the seasonal festivities that comes our way during the holiday time of year! 5 Ways to Stretch Your Dollar Through All the Seasonal Festivities #1 Shop in your pantry One of our mantras in the CGS Facebook Group is “I have food at home!” This holiday season, make it a point to shop in your pantry before going to the grocery store or giving gifts! Use the ingredients you have on hand for meal preparation. You can even gift food items that you haven’t used or don’t plan on using. Not only does shopping in your pantry help you keep your dollars in your wallet, but it allows you to use everything you’ve got…just in time for a new year! Stretch your dollar and get the most out of your items on hand by scoping out the pantry before spending money on food items! #2 Don’t be afraid to “re-gift” gifts I’ll be the first one to admit I do this and don’t feel bad about it! One year, I had bought myself a perfume set. Come the holiday season, I ended up getting the exact same set as a gift. Instead of having 2 of the same perfumes, I re-gifted the gift set! There’s nothing wrong it with, and it helps you save money! If you received gifts you know you wont use, or gifts that those in your life would enjoy more than you, give them away! Just make sure you don’t give it back to the original giver. That may be a little embarrassing to explain! Would you rather not re-gift? Give those old gifts to charity! If you donate to Goodwill or other charities during the holiday season, that could be a great place to let the gifts go and get to a new home. #3 Pick up an extra shift or two There’s no better way to stretch your dollar than by making more dollars! While the holiday season can be a crazy time of the year, if you have the time and capacity to make some extra money…take it! This could also help you as you create your holiday budget. Service based jobs, especially around the holidays, can help you bring in a lot more cash via tips! Everyone (well, mostly everyone) is in a “giving” mood and that translates into more money in your pockets. Consider Uber, Lyft, Instacart, Postmates or other delivery and courier service options! Retail is also an industry that picks up over the holidays. If you’re looking for something seasonal and temporary, consider working part-time at your favorite retail stores. If you spend money there on the regular, you can get discounts for being an employee! #4 Request cash or gift cards as your presents Unless I have a specific gift in mind that I need or want, my go-to gift request is always cash or gift cards to stores I regularly spend money. Last year, I got over $75 worth of Starbucks gift cards that I was able to use all through January. That helped me come in under budget in my Dining Out category! I love getting work done at my local Barnes and Noble. The year before last, I got Barnes and Noble gift cards that helped fund those day trips! My point is that you can stretch your dollar by requesting cash or gift cards to stores you frequent. This may not result in savings during the holiday season, but I can result in savings shortly after…when your budget likely needs it the most! #5 Remind yourself that debt from the holidays is not worth it Rounding out our list of ways to stretch your dollar through all the seasonal festivities is by reminding yourself that holiday spending debt is SO not worth it. Whether you’re going into debt for yourself or for others, it’s never a good idea. Not only do you feel guilty once the holiday season is over, you’re cleaning up the mess for months to come. I might add that those who care about you wouldn’t want you to go into debt just so you can give them nice gifts. Ask yourself why you feel you need to spend so much to give to others. As you know, I’m all about getting the most bang for your buck. Always. So, when it comes to retirement, rolling over your old retirement plans into new or current plans can be an incredible option for you. Keep reading for 4 reasons to rollover your old retirement plans and one of the easiest (and cheapest) ways to do so. 4 Reasons to Rollover Your Old Retirement Plans #1 You’re not maxing out your earning potential What makes a retirement plan so lucrative is the constant contributions over time. That means your contributions AND earnings (gains) compound over time. The more you contribute, the more you earn, the more you have in the end. When you’re no longer contributing to an old retirement plan (usually because you left that employer), it means you’re missing out on major compounding gains. You’re not adding to that plan, and therefore the only growth is based on what’s currently in the plan. To get the most bang for your buck, in terms of earning potential, you’ll need to start contributing to it. The only way to do that is by rolling it over into an IRA or your current employer’s retirement plan. #2 You run the risk of forgetting about the old plan(s) Out of sight, out of mind, right? Right! Roll over your old retirement plans into your new or current ones, so you know that all your assets are accounted for and can keep growing. #3 You’re not as organized as you could beThe more accounts you have, the more organized you need to be. When you have financial accounts (whether they’re old retirement plans or not), all over the place, it takes a lot to keep track of them all. Bank accounts are easier because most people don’t forget about their cash. But the more retirement plans a person has, the less organized they end up being. Make your financial life easier by rolling over retirement plans. Having all your retirement funds in one place makes it so much easier to manage and keep track of. That organization will allow you to focus on building wealth – not on wondering what wealth you already have. #4 You could be paying more in fees When it comes to retirement plans or investing accounts, one thing that can’t be escaped are fees. They will always have a management fee. However, if you’re no longer with the company that has your old retirement plan, you could be paying more in fees. In fact, 73% of people don’t know how much they’re actually paying in 401k fees. The more retirement plans you have across multiple companies, the more fees you’re paying. When you get all your retirement funds into one place, you only have to worry about the fees associated with that current plan. I’m sharing 5 tips for creating a holiday budget that helps you feel ready for the seasonal festivities.5 Tips for Creating a Holiday Budget#1 Assess what you already have saved for holiday shoppingIf you’re one of those A+ personal finance students who has a sinking fund year-round for holiday shopping, then way to go!If not, consider starting one for next year. Whether you have the year-round holiday shopping fund or not, take some time to think about what you already have saved for holiday spending.It doesn’t have to be much, but knowing you already have something saved for the holidays makes you feel so much better than starting from scratch.If you don’t have anything saved, no worries—we’ll just have to make it a priority moving forward. Pick and choose what gets allocated to holiday shopping. Anything is better than nothing.#3 Add in seasonal categories to keep you on trackDo you make a new budget every month? Then, we are one and the same! Every month I create a new “tab” in my budget spreadsheet document and create my new budget for the month.This allows me to add in categories that may not be there year-round.I recommend adding in seasonal categories to your budget to help you keep track of what you want to spend and what you actually do spend.Your categories could be: Holiday Gifts, Seasonal Activities, or Festive Spending.Once you have your seasonal categories added, you can allocate your income to them. This falls in line with the tip above: repurpose your recreational spending limits to your new seasonal budget categories.#4 Are the numbers in your budget realistic?Since your budget should include your income, you’re able to see if the money that you allocate to your budget categories is in line with what you actually bring home.It’s so important to make sure the numbers across your budget categories are realistic.If you’re budgeting to spend more than you make, that means you’ll end up tapping into savings or using credit cards. 5 Ways to Revamp Your Savings Goals
Coming from a girl who has been setting money and savings goals for years, sometimes your goals just need a revamp! While it’s great to be ambitious with any goal, things don’t always play out as expected. Just because the original goal you set hasn’t been accomplished doesn’t mean you can’t eventually achieve it. A lot of factors, some in your control and some out of it, go into achieving and not achieving your goals. If you’re struggling to set savings goals you actually hit, let me help! Small tweaks can go a long way. I’m sharing 5 ways you can revamp your savings goals and put yourself in a position to start setting and achieving realistic goals. Nothing keeps you striving for more like reaching your savings goals! 5 Ways to Revamp Your Savings Goals #1 Reduce the number of savings goals you set at one time This is such an important thing to be mindful of, and I stress it to my clients ALL the time. When you focus on too many savings goals at one time, you spread your resources thin. Let’s say you have 4 goals you’re working towards—you’re likely giving 25% of your savings to each one. That means it’s take you longer to reach all of them. Instead, focus on 1-2 money goals at a time. Now you’re giving 100% to 1 goal or 50% to 2 goals. This gets you to your finish line faster than if you were focusing on even more goals. While you can always get out there and make more money, the same theory applies. Too many goals spread your resources thin. Take some time to think about your highest priority or deadline-specific goals. Make it a point to work towards those ones first. Not to mention, the momentum you get from achieving goals keeps you wanting to reach more and more of them! #2 Re-evaluate your budget to set the stage There’s nothing worse than setting a goal that isn’t realistic for your situation. The best way to avoid that trap is by reviewing your budget from the beginning. After all of your priorities are covered, how much do you realistically have to put towards your savings goals? When you know what’s realistic for your situation, you can set timelines that help you reach your goals accordingly. You can also take it a step further and try to beat your sensible timeline! Yes, you know when you should achieve your goal, but can you achieve it sooner?!#3 Ask yourself if the goal is really what you want To do what it takes to reach your goals, they have to mean something to you. What fun is it to work so hard for something you don’t actually want? No fun! As you’re going through the process of revamping your savings goals, ask yourself if the goals you have excite you. Do you really want what you originally set out to achieve? If the answer is yes, then great! Keep working towards it. If the answer is no, then scrap the goal and start over with one that means something. I promise you, when you have goals that really matter, goals that hit at your core values, you will grind until you reach them. You will put in the work, effort and time needed to achieve them – because they are worth it to you. On a final note, it’s okay that your goals change. Maybe you really did want to achieve the savings goal, but as your situation changed, and now the goal doesn’t mean anything to you. It’s perfectly fine to throw goals away that no longer server a purpose. In fact, I’d rather you throw them away! Otherwise, you’re putting your resources on goals that don’t mean anything to you anymore. #4 Consider extending your timelines Remember, your budget will tell you what you can realistically put towards your savings goals. With that information, you can assess if the timelines you’ve given yourself to reach the goals are valid. Another thing to keep in mind is that things come up. You may have been on track to reach one goal, but something popped up and required you to shift your focus to something else. In those cases, you’ll want to extend your original goal timelines. There’s nothing worse than having to shift your goals mid-way and then be reminded that you didn’t achieve it when you originally wanted to! A good example of this is when your goal is to pay off debt, but an emergency pops up. If you had savings to cover the emergency, your focus shifts to rebuilding that savings. It means your debt payoff is paused – not cancelled, just paused. #5 Follow the S.M.A.R.T criteria when setting goals You’ve likely already heard of setting S.M.A.R.T goals, and if you haven’t, you won’t forget it after this article! Here is what it means to set S.M.A.R.T goals: Specific – target a specific area for improvement. Measurable – quantify or at least suggest an indicator of progress. Achievable – specify how the goal will be achieved Realistic – state what results can realistically be achieved, given available resources. Time-related – specify when the result(s) can be achieved. When setting your money and savings goals, you want to ensure each of the criteria is met. Get specific with your particular goal. Think about how you can track your progress to ensure you reach your goal. Specify what you are going to do to reach your goal. Be realistic with your goal, in relation to your current situation. Give yourself a timeframe for when you can achieve that goal, remembering to be realist to your situation. Making a note in your calendar and giving yourself some time to finish the task at hand will truly be a life and time saver.The size of your closet and the amount of stuff will determine how long it takes—and there’s no need to rush! In most cases, taking a peek at what your closet looks like prior to organizing will help you see what actually needs to be organized.Organizing your closet on a weekend is ideal. That way, any items you plan to donate can be bagged and set aside to drop off at the start of the week.#2 Out with The OldWe accumulate so much in a course of a year that organizing your closet is a total must. When it is time to clean out your closet, you’ll probably ask yourself why you either have kept something for so long or why you bought it in the first place!Take this time to toss out old items that you no longer are interested keeping. Still, it helps to designate a place for everything in your closet.Keep like items with like items. When it comes to the appearance of your closet, categorizing plays a huge role.Keeping your similar items grouped together in your closet makes it easier for when you’re looking for them in a hurry, and your closet will look nicer.Hang your belts in the same spot, group your Levi jackets alongside each other and—most important—keep your workout shirts separate from your pajamas because there is nothing worse then hitting the gym in your sleepwear.#5 Utilize Your SpaceStop procrastinating and worrying about organizing your closet. The key is just to utilize your space in a way that works for you.Separate your clothes into categories such as pants, dresses, tops, outerwear, accessories, and undergarments.Depending on the size of your closet you can create shelves for your tops that you do not want to place in your drawer.
