With only 6 ingredients needed, you can make a delicious (and healthy) bake! We recently came across a recipe for a Cheesy Zucchini and Quinoa Bake on the Sugar Free Mom blog and we had to share it. Nothing beats a simple recipe that provides good food to last for a few days.
Cheezy Zucchini and Quinoa Bake Recipe
4 cups zucchini noodles or 2 medium zucchini
8 ounces shredded cheddar cheese
1 cup cooked quinoa
2 tablespoons extra virgin olive oil
1/2 teaspoon salt
2 tablespoons grated Parmesan cheese
1. Preheat oven to 400 degrees.
2. Toss zucchini, cheddar, quinoa, oil and salt together in a bowl then spread into an 8 by 8 baking dish.
3. Sprinkle parmesan over the top and bake for 30 minutes until the top is golden.
